Easy to make and full of flavor, red beans and rice is made even better with the addition of our Conecuh sausage.

Ingredients
- 3 tbsp vegetable oil divided
- 1 lb Conecuh Hickory Smoked Sausage sliced 1/2 thick
- 1/2 cup chopped yellow onion
- 1/2 cup chopped celery
- 1/2 cup chopped green bell pepper
- 2 tsp minced garlic
- 1 (15-ounce) can dark red kidney beans drained and rinsed
- 1 (15-ounce) can light red kidney beans drained and rinsed
- 1 (15-ounce) can diced tomatoes undrained
- 2 1/2 tsp Creole seasoning
- 1 tbsp fresh chopped thyme
- 2 tsp paprika
- hot cooked rice to serve
Instructions
- In a large Dutch oven, heat 1 tablespoon oil over medium-high heat. Add sausage; cook, stirring occasionally, until browned.
- Remove browned sausage from pan using slotted spoon. Add remaining 2 tablespoons oil, onion, celery, bell pepper, and garlic to pan. Cook, stirring frequently, until tender, about 10 minutes.
- Add beans, sausage, tomato, Creole seasoning, thyme, and paprika; simmer 10 minutes.
- Serve with rice.

Simple and delicious! We live in south Florida and only buy conecuh! Grilled, breakfast, recipes—can’t beat the flavor. I wanted seconds and thirds…hearty and not mushy like some recipes.
Use dry Camellia beans and Conecuh Cajun sausage**NO NEED TO SOAK the beans. Cook the beans in a slow cooker on low for 7 hours with chicken broth & water, peppers, onions, garlic, celery and creole seasonings. After 6 hours smash some of the beans to thicken the sauce. Cook one more hour and enjoy!!

Made this for lunch today, perfect recipe for a bitter cold day. Instead of using 2 cans of kidney beans, I added leftover corn and lima beans. Also I used Fire-roasted diced tomatoes instead of plain tomatoes. It is excellent, I will add this to my list of favorite recipes. Of course, I served it over rice.
I made recipe as directed. It was a quick and easy recipe with everything on hand. instant pot rice and the whole meal was ready in 35 minutes. I will be adding it to the normal rotation.
I’ve made a similar dish for years with the hickory sausage and love it so much that I came to your website to browse. Found this recipe, added some fresh thyme like what is mentioned in y’alls recipe and it is so much more flavorful!! I will definitively be trying other recipes on your site!
This was fantastic! Using the smoked conecuh sausage we purchased from Aldis, we followed the recipe with the exception of using 2 cups of fresh Roma diced romatoes from our garden and 2 cans chili beans drained.(that’s what we had) served it up in bowls over rice, absolutely loved it, the browned sausage imparted such a lovely flavor! Will definitely make again! I hope Aldis continues to carry Conecuh sausage, Ive never seen it anywhere else here in southeastern Wisconsin.
